SWEET & SPICY CHICKEN - AYAM MASAK KECAP - PEDAS MANIS

This dish is a very common Indonesian dish and easy to prep and cook.

AYAM MASAK KECAP - PEDAS MANIS that how we called in Indonesia. Even though is considered a quick dish but it requires some good time braising. Indonesia Good old braising which is in an open pot no lid needed.

Let's get started, 

ingredients:

600 gr Chicken drumsticks/wings (drumsticks chosen for meat content but personally I prefer wings)
1 Brown Onion  
5 tbsp Kecap Manis Bango (Sweet Soy Sauce)
1 tsp sesame oil 
½ tsp Galangal powder
½ tsp finely chopped ginger
2 Bay leaves
3 Thai Chili (adjust accordingly since this chili is ... you know :) )
3 Red Chili
1 tsp palm sugar (you can substitute with brown sugar)
1 tbsp Lime juice
1/2 cup of chicken broth or water
Salt to taste

For Aromatic, we need

5 cloves garlic
2 shallot
½ tsp white pepper 

All blended to paste

Directions:
1. Apply lime juice on chicken skin and let it stand for at least 10 mins. Over medium-high heat oil, chicken down, and fry for 2 mins or until we get a nice seared skin. Chicken out, but leave 2 tbsp of oil in the wok
2. Stir fry the aromatic paste, add red chili, that chilli and stir until we get the aroma. Chicken in, sesame oil in, palm sugar in, 1/2 cup water in, bring to boil and add KECAP MANIS Bango in and salt to taste. Adjust heat to simmer until almost liquid vaporized. Yes.. is open pot braise, means we need to keep an eye on liquid content, stirring occasionally, avoid over thickened the sauce, it can lead to burning taste. Believe me, been there :)
